Veto Pad See Ew
I'm all about quick and easy meals that can be thrown together in 20 minutes or less. Most fast food that's out there is made with filler ingredients, has loads of unnecessary additives and is lacking in essential nutrients. This Veto (vegan & keto) version of the popular Thai noodle dish is nutrient rich and super simple to make. It's low-carb thanks to the konjac noodles and green veggies. Did I mention it's super tasty too?

350 grams broccoli florets
300 grams choy sum roughly chopped
25 grams spring onions sliced
500 grams organic tofu diced
80 ml sugar free bbq sauce
4 tbsp tamari
1 tbsp sriracha
2 tsp sesame oil
1 packet konjac noodles (I used slendier - available from the health aisle in major aussie supermarkets)
1 tbsp coconut oil
- Heat the coconut oil in a large saucepan and saute the tofu until golden
- Meanwhile mix tamari, bbq sauce and sriracha in a small bowl and set aside.
- Add remaining veggies, noodles and sauce and stir fry until broccoli is tender.
- Remove from heat and stir through sesame oil. Serve & enjoy with love (and more sriracha because that stuff is tasty!).
